Tex-Mex Apple Brown Betty

Pre-heat oven to 350 degrees.

3 medium Granny Smith apples
1 package of Wackym's Kitchen Margarita cookies
1/2 stick of unsalted butter, melted
1 1/4 c dark brown sugar
1 tsp cinnamon
3 T fresh lime juice

Core apples, peel and slice into chunks. Break cookies into small pieces. Toss with butter. Mix brown sugar and cinnamon in a separate bowl.

Spread 1/3 of the cookie mixture in a 8 x 8" pan. Distribute 1/2 the apples evenly. Top with half the sugar mixture and sprinkle with half the lime juice. Cover with 1/3 of the cookie mixture, the remaining apples, the remaining sugar mixture and the remaining lime juice. Cover with the balance of the crumb mixture.

Top with aluminum foil and bake 40 minutes until the apples are tender. Uncover and raise the oven temperature to 400 degrees and bake until browned (about 15 minutes).

Serve hot with crème fraîche or vanilla ice cream.
