Chocolate Snicker Doodle Banana Pudding

Pre-heat oven to 425 degrees.

1 c sugar
3 T corn starch
3 c whole milk
4 large egg yolks (reserve egg whites for meringue topping)
3 T unsalted butter
1 1/2 tsp vanilla
1 package of Wackym's Kitchen Chocolate Snicker Doodle cookies
4-5 ripe bananas, sliced
4 egg whites
1/4 tsp cream of tartar
1/2 cup powdered sugar
1/2 tsp vanilla

Mix sugar and corn starch in a heavy sauce pan. Slowly add milk. Whisk in egg yolks, then add butter, stirring constantly over medium heat until the mixture thickens. Reduce the heat and add vanilla.

Line the bottom of a 2 quart dish with half of the cookies. Cover with 1/3 of the pudding and half of the bananas. Layer the remaining cookies, 1/3 of the pudding and the remaining bananas. Top with the pudding.

Quickly beat egg whites until foamy in a clean grease-free bowl. Add cream of tartar and beat until stiff. Add powdered sugar and continue to beat until peaks are stiff and glossy. Beat in vanilla until stiff peaks form. Once stiff, spread over the pudding, anchoring to all points around the dish.

Broil for 5 minutes until the meringue is lightly toasted.

Serve warm or refrigerated.
